Olive Oil
First, note the New Yorker and other reliable sources report that most olive oil is phony. AARP states the most reliable sources are California olive oils. I try to consume it every day. 40% of calories in Greece are from fat, yet Greeks have a much lower incidence of heart disease! One factor is that olive oil in the diet has a high level of polyphenols, especially many flavanoids that are beneficial to health. Extra virgin olive oil has the most polyphenols, up to 1g/liter. Extra virgin has less than 0.1% acidity. Virgin olive oil has some polyphenols, and has less than 1% acidity. Refined olive oil has no polyphenols. It is acidified artificially and that removes the polyphenols.

This effect could enhance the cardioprotective effect of olive oil–enriched diets.” A Mediterranean diet with olive oil as the principal source of fat reduces the risk of heart disease. Olive oil and red wine polyphenols inhibit endothelial adhesion molecule expression. Oxidant stress and oxidized LDL activate NF-kB which is very harmful.
